It started with a crock

It started with a crock.
Nobody set out to build a drinks company. In 2021, the goal was simpler: make something honest. A low-sugar kombucha brewed on a Nairobi kitchen counter, for friends who couldn’t find anything like it nearby. Something real, something alive, something that actually tasted the way it was supposed to.
It worked. Then it really worked. The crocks multiplied quietly, and Fermenta grew out of that kitchen the way all good things grow — slowly, and without forcing it.

We’re bigger now than that first batch would have predicted. But we ferment the same way we always have — unhurried, by hand, with someone tasting every culture before it ever reaches a bottle. There’s no shortcut to that kind of care, and we’ve never looked for one. Every bottle that leaves our kitchen carries the same standard as the very first crock. That part will never change.

How We Brew

Real kombucha takes time. The cultures need it, the flavor needs it, and honestly — your gut needs it too. Every batch we make follows the same careful process, from the first steep to the moment it’s sealed and chilled. No steps skipped, no shortcuts taken.
Brew
Every batch begins with organic tea and raw cane sugar, brewed slowly until the liquid is deep, fragrant and ready. It's a simple start, but getting it right matters more than most people realize — this is the soil everything else grows from.
Culture
We introduce a live SCOBY and step back. Over 14 days, billions of bacteria and wild yeasts quietly do what they've been doing for centuries — fermenting, souring, building complexity and flooding every milliliter with living probiotics. The wait is the process. We respect it completely.
Flavour
When fermentation is done, we fold in fresh fruit, herbs and spices. Not extracts, not powders — real things, chosen for flavor and handled gently so their character comes through in every sip. This is the part that makes each variety unmistakably its own.
Bottle
Hand-bottled in small runs and chilled immediately, so the cultures stay alive from our kitchen all the way to yours. Every bottle that leaves here has been tasted, checked and signed off by the people who brewed it. That's the only quality control we trust.
